You're absolutely right. Jumping into veganism can be a big emotional adjustment. I know in the case of my wife and I, we knew eating meat felt wrong to us, but like a lot of people we just tried not to think about it. Once we made the switch, we had the opportunity / chore of really looking inside and owning our past decisions. Guilt was a big part of that, and I think you're right that this is where a lot of the anger on our side of the fence comes from. It's a shame, when you consider that there's no practical benefit to feeling guilty about something once you've decided to change your behavior. After that, you're only hurting yourself. Until vegans are seperated from extremists and militant anger-mongers, they will be seen as a fringe group. Being extremist and volatile hurts your credibility.
